Chili Cheese Dip

I used to make this recipe for parties a lot!:  https://www.cherylsrecipes.net/recipe/chili-dip/  It was super fast and easy.

However, when I found out that I had wheat and soy allergies, I could no longer make it because every single canned chili I can find has soy (along with a lot of preservatives) in it!  I am also not a big fan of Velveeta because it is so processed.  So I came up with this recipe as a replacement and it is even better, although obviously not as easy!  It is still not too difficult though.  I will certainly be making it again!

If you would rather used canned chili for the convenience, just use 3 cans of chili in this recipe.  Or, if you have a favorite chili recipe (with or without beans), substitute about 6-7 cups of that for this chili.

Chili with no beans
  1. In a large, deep pot, brown ground beef, onion, sweet pepper, garlic, and jalapeno in the oil.
  2. Add all remaining ingredients except cheese and cream. Simmer for a couple of hours until it is cooked down and quite thick.
Dip
  1. Add cheeses to the chili. Stir over medium or low-medium heat to melt the cheeses. Add a little heavy cream for a better texture.
  2. Serve with tortilla chips. I garnished mine with cilantro. My husband liked it even better with the cilantro.

Fred for 60 people

This was a recipe that the cooks used to make at our church camp.  They didn’t have a name for it, so when someone asked, they would say “Fred”.  Super easy and good!

  1. Make graham cracker crust with graham cracker crumbs and melted butter. Press crust into bottom of large sheet cake pan. Bake at 325 for 10 minutes.
  2. Spread pudding over crust. Then top with whipped topping and sprinkle chocolate chips over top. Serve!

Apple Crisp for 120 people

I am actually not sure about the baking time for this dish.  The original recipe made 6 servings and baked for 40 minutes.  I never wrote down what the cooking time was for the larger batch.  So just keep an eye on it and let me know if you make it how long it took.

Instructions
  1. Combine oats, brown sugar, flour, cinnamon, and salt in mixing bowl. Cut in butter until crumbly (should be the size of coarse crumbs).
  2. Peel apples. Half, core and slice fruit. Place in bottom of pans. Sprinkle oat topping over the fruit.
  3. Bake in 350 degree oven about 40-60 minutes or until apples are tender. Serve warm with whipped cream or ice cream.
Recipe Notes

Peach Crisp:  Substitute 2 1/2 lb. peaches (about 10 medium) for the apples.

This is a recipe my mother-in-law gave me that she always used for funeral dinners.  I also used it many times for church dinners.  It was always very popular.

  1. Mix all dressing ingredients together and let stand in refrigerator at least 1 hour. Stir in cole slaw. It will seem like there is not enough dressing to begin with, but will become thinner after the cole slaw is added and it sits for a little while.
