This is just as easy as the traditional Rice Krispie treats, but uses caramel in place of marshmallows and tastes much richer!! You can buy the caramel in 5 lb. blocks. I get mine at a Mennonite store, but it is also sold on Amazon.
Cut caramel into slabs for easier melting and place into deep sided pan with butter and milk or half & half. Melt over medium low heat. Stir in cereal. Spread into greased 9" square pan and let cool.
If you would like, you can melt the chocolate chips over low heat and drizzle over the top. Refrigerate to set.
This is our grandkids’ favorite breakfast!!! I make the batter and my husband makes the pancakes. You can also make them without the chocolate chips if you prefer.
Beat egg with mixer until fluffy. Beat in remaining ingredients just until smooth. You may have to add a little more buttermilk if it is too thick. Drop by 1/4 cup onto hot greased griddle. Cook until edges start to cook, then flip and cook on other side. Continue with rest of batter. Serve warm with powdered sugar.
Recipe Notes
The buttermilk powder makes a more fragile pancake than the real buttermilk. We like to use the full fat buttermilk.
Although spelt is actually a type of wheat flour, most people with wheat allergies can digest spelt flour with no problem. Obviously, you should not eat spelt if it is a problem for you.

Brown meat mixture ingredients together with olive oil.
Add all Seasonings.
Note: If you are making this for another day, stop here. It will be easier to cool down and store in the refrigerator at this point, then finish it the day you are serving it.
Combine all ingredients and simmer until ready to serve. You will need to add water as it is cooking so it is not overly thick.
Serve with Frank's Red Hot Sauce, shredded cheese, sour cream, Fritos, sliced jalapenos, etc.
Recipe Notes
The chocolate chips add a richer flavor and beautiful color.
