Instructions
  1. In a Dutch oven, melt butter over medium low heat. Add onions and cook, covered, until tender. Stir in flour until blended; cook 1 minute, stirring constantly.
  2. Gradually stir in milk, soup base, and pepper; cook, stirring constantly, until thickened. Stir in cream. Reheat just until broth is boiling. Add salt if desired. Combine with potatoes and pour into a greased 9x13" baking dish.
  3. Bake, covered tightly with foil, at 375 for 45 minutes-1 hour.
  4. Remove foil and bake on speed bake for another 45 minutes, until done. Note: If you don't have speed bake, increase the oven temperature to 400. Add cheese to top, if desired, during the final 15 minutes of baking time.

  1. Place insert in Instant Pot and set to Saute. When it says "HOT", add the oil to the pot.
  2. Add onion, carrots, celery and garlic. Saute for 4 minutes, stirring occasionally. Press cancel.
  3. Add remaining ingredients. Close the lid and set valve to "Sealing" position.
  4. Cook at high pressure for 22 minutes.
  5. Let naturally release pressure for 10 minutes. Manually release any remaining pressure. Open lid and stir.

  1. Insert inner pot into Instant Pot and press saute button. Wait for the machine to say "HOT".
  2. Add oil, onion and garlic. Saute for 3-4 minutes, stirring occasionally.
  3. Add remaining ingredients and close lid. Set valve to "Sealing". Cook on high for about 5 minutes (1/2 the cooking time on the package of pasta you are using).
  4. Let pressure naturally release at end of cooking time for 10 minutes. Manually release remaining pressure and remove lid. Stir and serve.

Rice Pudding

This is just slightly sweet if you use the 1/2 cup of sugar called for the recipe, which is the way we like it.  If you like it sweeter, use 2/3 of a cup.  Our grandson said it tasted like candy that way!

You don’t want to overcook it, or it won’t be as creamy when it is chilled.  I find that 30 minutes of simmering is just right.  If serving it warm, you might want to let it sit for a few minutes to thicken up first.

  1. Combine all ingredients in a large saucepan , except butter. You will want at least a 4 qt. saucepan.
  2. Bring to a boil and simmer, covered, for 30 minutes, or until the rice is soft and creamy. Stir occasionally to make sure that the mixture doesn't stick to the pan.
  3. When the rice is tender, add the butter and stir to melt. Remove from heat.
  4. You can serve this warm or chill it first. I like it just like this. My husband puts cinnamon and sugar on his.

Alana’s Alfredo Sauce

This is the recipe my daughter-in-law gave me.  She says that she tweaks the ingredients, such as salt, pepper and garlic. Also, she prefers more parmesan, but our son (her husband) prefers it this way, so it is a personal preference.

  1. Put about 2 cups of water into a medium sized saucepan and bring to a boil over high heat. Boil until potatoes are tender. Drain potatoes.
  2. Meanwhile, in a small saucepan, melt butter over medium heat. Add flour and stir until smooth. Add onion powder, garlic powder, salt, pepper, milk and heavy cream, and continue stirring until thickened to desired consistency and smooth. Add to peas and cream sauce to potatoes. Stir together and serve.

Chicken & Homemade Noodles

Start with boneless chicken pieces and make a rich, scrumptious, thickened broth to go with it.  Then make some homemade noodles (or buy some fresh or frozen noodles) and cook them right in the broth.  Fantastic!!

For making your own homemade noodles for this recipe, use 3 eggs, 1 T. water, 2 3/4 cups light spelt flour (or all-purpose if no wheat allergy)

  1. Heat large (13") cast iron skillet over high heat. Add oil and chicken. Season chicken with pepper. Cook quickly, stirring often, until done. Remove from pan and place in crock pot.
  2. Melt butter in same skillet over medium heat. Add carrots, celery, onion and garlic, and saute until tender, about 10-15 minutes.
  3. Add flour and blend evenly.
  4. Quickly whisk in cream, water, and chicken base until smooth. Add to crock pot and turn onto low until ready to continue.
  5. Before adding noodles, turn crock pot to high heat. We positioned the Kitchen Aid in such a position so the noodles go directly into the crock pot.
  6. Add noodles and stir to separate. Cook until noodles are tender, about 20 minutes. Taste and adjust seasoning if necessary.
Recipe Notes

I reduced the amount of flour for thickening because I was using homemade noodles.  For making your own homemade noodles for this recipe, use 3 eggs, 1 T. water, and 2 3/4 cups flour.  If you are not using fresh homemade noodles, you may need more thickener.

Although spelt is an ancient form of wheat, most people with wheat allergies can eat it with no problem.  However, it still contains gluten, so avoid spelt if you have a reason to avoid gluten.

Better than Bouillon organic beef and chicken bases are my favorite to use in broths because they are gluten free and soy free.

Chili Cheese Dip

I used to make this recipe for parties a lot!:  https://www.cherylsrecipes.net/recipe/chili-dip/  It was super fast and easy.

However, when I found out that I had wheat and soy allergies, I could no longer make it because every single canned chili I can find has soy (along with a lot of preservatives) in it!  I am also not a big fan of Velveeta because it is so processed.  So I came up with this recipe as a replacement and it is even better, although obviously not as easy!  It is still not too difficult though.  I will certainly be making it again!

If you would rather used canned chili for the convenience, just use 3 cans of chili in this recipe.  Or, if you have a favorite chili recipe (with or without beans), substitute about 6-7 cups of that for this chili.

Chili with no beans
  1. In a large, deep pot, brown ground beef, onion, sweet pepper, garlic, and jalapeno in the oil.
  2. Add all remaining ingredients except cheese and cream. Simmer for a couple of hours until it is cooked down and quite thick.
Dip
  1. Add cheeses to the chili. Stir over medium or low-medium heat to melt the cheeses. Add a little heavy cream for a better texture.
  2. Serve with tortilla chips. I garnished mine with cilantro. My husband liked it even better with the cilantro.

  2. Meanwhile, make the soup. In a Dutch oven, melt butter over medium heat. Add onions and cook, covered, just until tender. Add mushrooms and lemon juice. Cook just until mushrooms are tender.
  3. Stir in flour until blended.
  4. Add water, soup base, and pepper. Cook, stirring, frequently, until thickened. Stir in cream.
  5. Add meatballs and warm thoroughly.
  6. Serve with rice or pasta.
