Chili Cheese Dip

I used to make this recipe for parties a lot!:  https://www.cherylsrecipes.net/recipe/chili-dip/  It was super fast and easy.

However, when I found out that I had wheat and soy allergies, I could no longer make it because every single canned chili I can find has soy (along with a lot of preservatives) in it!  I am also not a big fan of Velveeta because it is so processed.  So I came up with this recipe as a replacement and it is even better, although obviously not as easy!  It is still not too difficult though.  I will certainly be making it again!

If you would rather used canned chili for the convenience, just use 3 cans of chili in this recipe.  Or, if you have a favorite chili recipe (with or without beans), substitute about 6-7 cups of that for this chili.

Chili with no beans
  1. In a large, deep pot, brown ground beef, onion, sweet pepper, garlic, and jalapeno in the oil.
  2. Add all remaining ingredients except cheese and cream. Simmer for a couple of hours until it is cooked down and quite thick.
Dip
  1. Add cheeses to the chili. Stir over medium or low-medium heat to melt the cheeses. Add a little heavy cream for a better texture.
  2. Serve with tortilla chips. I garnished mine with cilantro. My husband liked it even better with the cilantro.

Instructions
  1. Preheat oven to 425. Remove papery skin from garlic head, but do not peel or separate cloves. Place on a piece of foil and drizzle with olive oil. Wrap in foil and place on a baking sheet.
  2. Place each onion on a piece of foil, cut side down. Drizzle with olive oil, but do not wrap with foil. Place on baking sheet with garlic and bake for 30 minutes. Remove from oven and wrap onions with foil. Return to oven for another 30 minutes.
  3. After onions and garlic have cooled awhile, separate garlic cloves and squeeze to extract garlic pulp. Discard the skins. Put all ingredients in food processor. Process until it is well mixed and a smooth consistency.
Recipe Notes

You can also use the garlic cloves that are already peeled.  We buy a large bag from Costco and freeze them.  Then we just take out whatever amount we need and use it.  For this recipe, just put a handful on the piece of foil and continue as described.  No need to extract garlic pulp from the skins this way!

Best Ever Banana Cake with Cream Cheese Frosting

This is not my recipe.  It came from http://www.food.com/recipe/best-ever-banana-cake-with-cream-cheese-frosting-67256

Frosting

Servings: 9x13" pan
Instructions
  1. Preheat oven to 275. Grease and flour a 9x13" pan.
  2. In a small bowl, mix mashed banana with the lemon juice; set aside. In a medium bowl, mix flour, baking soda and salt; set aside. In a large bowl, cream 3/4 cup butter and 2 1/8 cups sugar until light and fluffy. Beat in eggs, one at a time, then stir in 2 tsp. vanilla. Beat in the flour mixture alternately with the buttermilk. Stir in banana mixture. Pour batter into prepared pan and bake in preheated oven for one hour or until toothpick inserted in center comes out clean. Remove from oven and place directly into the freezer for 45 minutes. This will make the cake very moist.
  3. For the frosting, cream the butter and cream cheese until smooth. Beat in 1 tsp. vanilla. Add icing sugar and beat on low speed until combined, then on high speed until frosting is smooth. Spread on cooled cake. Sprinkle chopped walnuts over top of the frosting, if desired.
Recipe Notes

These were the notes for this recipe: This is one of (if not) the BEST banana cake I have ever tasted! I thought the oven temp of 275° sounded a little low, but this cake baked up (and rose) beautifully in my oven at this temp after pretty much exactly one hour. I do not know if the little "freezer trick" to this recipe is what ensured its moistness or not, but I did it, and it was exceptionally moist & delicious. Would be interesting to see if it still came out as great if this step was skipped. All I know is that I followed this recipe EXACTLY as stated (except that I had no buttermilk, so I subbed with a mix of lemon juice & milk) and I got exceptional results. So moist and yummy...a dense cake, similar in texture to a carrot cake... I personally would not call this frosted banana bread :o) Depending on the amount of frosting you like you can decide whether to half the recipe or not. I used the full recipe and had some leftover. I sprinkled on the chopped walnuts and threw this baby in the fridge and cut it the next day...TO DIE FOR! I really liked it slightly chilled, but great at room temp too! It got better each day it sat, I always make this cake at least the day before I need or want it. I was extremely pleased with this cake and will be making it over & over again!! So glad I came across this one!! (on another website). (* * Just to update the recipe, (based on some of the reviews), the baking time may vary based on individual ovens. It was RIGHT ON for my oven, but some others have stated it has taken 1 hour 10 minutes, 1 hour 20 minutes, and my sister just informed me that it took 1 hour 30 minutes in her oven!!!!!)

Hot Sausage & Cheddar Cheese Meatballs

These can be quite spicy, depending on the heat of the jalapenos you use.  You have the option of using cream cheese in the meatballs or an egg.  The egg version seems to be a lot hotter than the cream cheese. However, both have a very nice flavor.

I have used Bob Evans Naturally! in this recipe because it is free of sodium nitrites and MSG.

Instructions
  1. Prepare baking pan by lining with foil, then topping with parchment paper. Combine all ingredients in mixing bowl.  Combine with mixer.  Shape into meatballs using small cookie scoop. Bake at 375 degrees F and bake for 15 minutes. My oven has a speed bake option and I use it for these.  You may have to bake for an additional 5 minutes or so if you do not have that option.
Recipe Notes

Although spelt is actually a type of wheat flour, most people with wheat allergies can digest spelt with no problem.  Obviously, you should not eat spelt if it is a problem for you.

It would be a good idea, after mixing the ingredients, to make a meatball-sized patty and fry it in a skillet to see if you would like to add more jalapenos or other spices.

These can be made up ahead of time and frozen in an airtight container before baking.  Then remove from freezer, thaw and bake when needed.
